Establish a minimum set of written policies and procedures for the operation to be run like a clock yet allowing for those real exceptions that arise in the daily operations. Develop desktop procedures so that any time an employee is absent for a prolonged period of time, another employee may follow them and continue the job with minimal disruption to the business, if any.
